History
The Sarutobi are an offshoot of the Senju clan via Son Gokū the Four-Tailed Monkey.
Generations later, the Sarutobi would settle within Mount Oinari, with one of its own, Sasuke Sarutobi, having an Inari shrine named after him in Inaho. Sasuke's son, Hiruzen Sarutobi, would later become the Fourth Chief.
Naming
Sarutobi clanspeople are named after lofty ideals.
Examples: "Asuma" [明日真] means "True Tomorrow"; "Hiruzen" [悲流善] means "Virtue Flowing from Compassion"; "Mirai" [未来] means "Future"; "Oinarimaru*" [御稲荷丸] means "Perfect Rice God" and invokes Mount Oinari; "Yūki†" [勇気] means "Courage"
Physical Characteristics
Sarutobi clanspeople are mostly brunet, with men often growing facial hair that gives them a “simian” appearance.
Behavior
Sarutobi clanspeople are often mischievous in their youth, much like stereotypical monkeys. Once they age, the Sarutobi shed most if not all their mischievous ways and become quite wise.
Bloodline
Owing to their descent from Son Gokū, the Sarutobi have access to the Boil Release, which can either boil their enemies alive or slowly dissolve them in boiling mist.

When I thought of the Four-Tails from the series, I remembered Hiruzen's summon, Enma. The more I think about it, the more I think Enma does the Monkey King more justice than the Tailed Beast named after him! Sad, really...
But! When I remembered what clan Enma's summoner was associated with, I thought: what if there was a reason Enma looked like the archetypal Sun Wukong? So, this, in addition to the changes I'm giving Monkey Boy...
*Oinarimaru: my equivalent of Konohamaru because Toto, we're not in Konoha anymore!
†Yūki: I decided to make Itachi's sensei a Sarutobi while using the surname Minazuki for something else because reasons ^^
Edit: decided to make the Boil Release a Sarutobi thing, since macaque monkeys, Sun Wukong's base, are known to frequent the hot springs, particularly in Jigokudani Monkey Park
